Delicata Bush is a unique winter squash variety, open-pollinated and an All-America Selections (AAS) Award Winner. It is known for its compact bush growth habit, making it an excellent choice for home gardens, raised beds, and smaller growing spaces compared to traditional vining winter squash varieties.
The plants produce distinctive cylindrical fruits with creamy skin marked by dark green longitudinal stripes. The flesh is rich orange, smooth, and creamy with a naturally sweet flavor often compared to a combination of squash and sweet potato. The fruit skin is more tender than many winter squash varieties, making it edible after cooking. Delicata Bush is excellent for roasting, stuffing, baking, and preparing soups.
The plants grow compactly and produce a good number of uniform fruits, typically weighing 450–900 g (1–2 lb). This variety reaches harvest maturity in approximately 80–100 days from sowing, and the fruits have good storage quality after harvest while maintaining their excellent flavor and texture.
Delicata Bush is well suited to the Gulf region. For best results, sow seeds from October to November or in February. Direct sow into fertile, well-drained soil in full sun, and provide consistent watering throughout the growing season to encourage vigorous growth and an abundant harvest of high-quality fruits.
